For July, we caught up with sexy green folks at the Green Truck to learn about organic catering, solar-powered kitchens and why the best thing for lunch is a Mother Trucker.

How did the Green Truck idea come about?
Owners Mitchell Collier and Kam Miceli are long time friends from New York City. They thought up the idea together after relocating to Los Angeles and realized how sustainable, organic meals seemed to be an unmet demand of busy professionals in one of the most health conscious cities in the country.
Do you have a catering and food background?
Mitchell grew up on an organic farm in Florida and has since been committed to supporting local, sustainable farming. Kam is an entrepreneur who cut his teeth on Wall Street.
What kind of food do you serve?
We make a point to serve only the freshest, local, certified organic ingredients on the market. We cater to all eaters; our menu boasts a variety of vegetarian, vegan, raw, gluten-free and, of course, meat options.
Why is it important for you to serve local and organic food?
We believe that a zero carbon footprint is the only way to begin healing our planet. Supporting local, organic farms is the most logical step to do just this.
Your truck is pretty cool. Does it really run on veggie oil? What about all the cooking and cooling equipment inside?
Yes, they run on used veggie oil as well as biodiesel. Also, our commissary, where we prep the food on the trucks, is solar powered.
“To-Go” food usually means “to-go” packaging. How do you work around that?
All of our containers and utensils are recyclable or compostable and made from corn starch.
Everyone who works in the truck is so attractive! Is that a coincidence or a requirement?
Our mission tends to attract healthy, passionate young people who are eager to get out on the street and spread the word about Green Truck.
Do you cater big events too? If so, what kind?
We cater a variety of events, many of them are for commercial and photo shoots as well as festivals and private events.
Green Truck is LA-based. Do you ever take the truck on the road, out of LA?
Absolutely. We travel all over Southern California for catering and festivals. Soon we’ll be expanding to meet the needs of our production customers in NYC.
What’s your ideal Green Truck lunch these days?
The Mother Trucker vegan burger never fails to hit the spot. We did just introduce homemade falafel wraps that have become a top seller, and our fish tacos are killer!
