Applying the second “R” principle – reuse – toward our leftover grease is far easier and tastier than pouring it down the drain, and far better for the environment too! If there’s just a little bit of grease in the pan, wipe it away with a paper towel that can then be tossed in the compost. If there’s a lot leftover, pour the grease into a small can or jar, and keep it covered in the fridge or freezer until you’re ready to use it. Duck and goose fats are divine for roasting potatoes (not low cal, but REALLY they’ll be the best roasted potatoes you’ll ever have). Bacon grease is fantastic in refried beans (see next month’s recipe). Try sautéing your onions in the grease instead of oil for the starter of a risotto or a hearty spaghetti sauce. Your taste buds will thank you, and so will your drains!
