Skip slaving over the stove this summer and go RAW. Besides the nutritional value in uncooked, unprocessed foods, you’ll save energy and money, keep your home cooler and chill out yourself.

Salads and cold soups are obviously great raw options but don’t stop there - try this easy, yummy, and dare we say, healthy dessert:

Frozen Fudge
1 cup dates, seeded
11/2 cups filtered water
1 tbsp pure vanilla extract
1 1/2 cups nut butter (such as almond or hazelnut)
1 1/2 cups raw carob powder
½ cup dried shredded coconut

Place the dates in a bowl, cover with the water, and soak for about 1 hour, or until soft. Drain, reserving the liquid. In a blender, blend the dates and vanilla until smooth, slowly adding soaking water as needed to form a creamy consistency. Transfer the date mixture into a large bowl, add the nut butter, and stir to combine. Ina separate bowl, mix the carob and coconut. Gradually add the dry carob mixture into the wet date mixture. Stir well. Press evenly into a 10 by 18-inch brownie pan, 1-inch thick, and freeze until firm, about 3 hours. To serve, cut into 1-inch squares. Serves 6 to 10.
